Melting point principle: as the molecular weight increases, the melting point increases. This observed in the series lauric (C12), palmitic (C16), stearic (C18). Room temperature is 25 o C, Lauric acid which melts at 44 o is still a solid, while arachidonic acid has long since melted at -50 o, so it is a liquid at room temperature.

Most fatty acids are unbranched and contain an even number of carbon atoms. Unsaturated fatty acids have lower melting points than saturated fatty acids containing the same number of carbon atoms.
For fats, I’m generalizing their melting point. It’s a false generalization, but it’s still useful to understand the average for common fatty acids: many fats melt above room temperature but below body temperature. (This is one reason why one chocolate maker can say, “Melts in your mouth, not in your hand.”)
